Chinese Garlic Chives & Bacon

These mild scented garlic flowers are delicious, only taking a couple of minutes to cook.  I associated garlic chives with the very first time I ate them in a Japanese restaurant, stir fried with tiny pieces of pork and  little sauce probably dashi based.  I would order this dish every time I was there.  This is a quick fix and nothing is quicker to deliver salty meaty flavour against this mild garlic scented flowers than bacon.

Throw the bacon into a dry pan and cook on a medium heat until the fat starts to render, it’s the fat released from the bacon that will cook the chives.

Cut the garlic chives in half, and throw in the thicker bottom half first, stir-fry that until it starts to wilt.

Chinese garlic chives with bacon

  • 1 bundle of garlic chives
  • 3 rashes of streaky bacon, cut into small pieces

Throw the bacon into a dry pan and cook on a medium heat until the fat starts to render, it’s the fat released from the bacon that will cook the chives.  Cut the garlic chives in half, and throw in the thicker bottom half first, stir-fry that until it starts to wilt.  Add the more delicate top half and keep stir-frying until that also wilts.  Cook for a further minute and serve.
